Slimming world Mexican rice bake

Back on it this week as I unfortunately had a 1lb gain at weigh in. Think this may have been because of the Chinese I had with the housemate and brownie with lots of chocolate sauce and ice cream. Opps!! 

My housemate made a Mexican chicken bake the other night and it looks and smelt amazing, so I decided to have a play around with the recipe. 


Mexican rice bake
Recipe for 2 

For the rice you will need-
Half a cup of rice
Half a tin of kidney beans 
Half a red and green pepper
Half an onion 

For the topping-
Half an onion 
Small carton of passata 
6 small tomato's halved 
1 garlic clove chopped 
1tsp of chilli powder
1tsp of paprika 
1tsp of cinnamon 
1tap cayenne pepper 
Salt and pepper seasoning 
80g cheese (2 hex) 

What you need to do-

Preheat oven to 200

Cook rice, drain and set aside 

Meanwhile fry onion, and garlic clove then add passata, spices and tomato's to the pan and let it simmer for about 15 minutes. 

In a seperate pan, fry onion and peppers.
Add rice and kidney beans.

Pour rice mixture into a oven proof dish.

Spread the sauce over the rice. 

Sprinkle cheese over the top and bake in oven until brown.

- when split into two portions it's free if you use the cheese as healthy extra. 

- can make smaller portions but I am greedy!

Peanut hottie

I had seen a lot of my fellow slimming world instagram friends post pictures of this peanut hottie. It's meant to be a hot drink and I had seen it popping up everywhere, so naturally I just had to get some.

I got it from sainsburys for £2.99 and when I say I got it, I mean my friend nicely got it for me as I wasn't going into sainsburys for ages and wanted it as soon as possible. 

As soon as my friend handed it over to me, I Just had to use it, so I sprinkled some into my porridge and it's safe to say I am hooked ( and so is my friend). I have not used it as a drink yet but I look forward to when I do! It comes in an orange tub and smells delicious. It was being passed round the team for all to smell! 


Now I love peanut butter cookies and I just love peanut butter over all. 20 grams of this is 4 syns and it's totally worth it! 
So far I have just used it for porridge and my favourite peanut butter flavoured oat cookies! I have plans for many more things! 

So to all you readers and fellow slimming world members, I would say get out to a shop now to get some! Or just wait until morning...

Scan bran cakes

When it comes to scan bran, there are a lot of mixed reviews. On its own I am defiantly not sure on it but it is great to use for baking. Today I made some chocolate scan bran cakes, I love them and make them lots as I can have them throughout the day.

What you will need
5 scan/oat bran
1 egg
Water 
Sweetener 
Hot chocolate sachet (2 syns)- I used aldi version but you could use options and in whatever flavour you like. 

What to do 

Preheat oven to 180
In a large mixing bowl, soak
Scan/oat bran with hot water 
Drain any excess water 
Mix 1 egg, hot chocolate and sweetener (I just kept trying the mixture and adding more sweetener until I felt it tasted seer enough for me) 
Once mixed, spoon into a cupcake tin and bake in oven for around 25 minutes until firm.

I used the oat bran as a healthy extra so 2 syns for the whole lot! 7 syns if not using as a healthy extra.

Weigh in day again!!

So after what I thought was a terrible week again, I lost 1lb! So 9lbs all together so far with slimming world, which I am happy with. Finally starting to get on track again! Really going to try this week as I only have 11lbs to go 

I have also joined the gym! Feeling very motivated at the moment but can't be sure that it will last but you never know, might actually stick to it this time.

So to celebrate my loss this week, I am treating myself to pop tarts! Got the very cherry ones! Yummmmmyyyy!! Been a long time since I have had them! Work out at 10 syns each.

For dinner I had veg and bean chilli with chips, cheese and sugar snap peas. I have to say, I forget I am on a diet sometimes.

Slimming world baked oats.


Really loving breakfast at the moment, so I am trying lots of different recipes. This morning decided to make my own version of baked oatmeal! Slimming world style.  I have to say that I am a big fan of this and will be making it again.

Slimming world baked oatmeal

35g plain oats (healthy extra)
100ml semi skimmed milk (part of healthy extra, I'm saving the rest for a hot chocolate later.)
1 tbsp golden syrup (2.5 syns)
Cinnamon (optional)
2 tbsp of sweetener (optional)
Banana (optional)
1 tsp choc shot (optional) (0.5 syns)

Preheat oven to 180 (fan oven temperature)

Mix all ingredients together and pour in an oven proof dish.

Bake for 15-20 minutes or until firm on top.

Serves with whatever you wish.


I had chopped banana and 1 tsp of choc shot with mine.

Weigh in Nerves and Oat biscuits.




Last night was weigh in night!! the dreaded night of the week. I had spent all day telling myself i had gain after having lots of treats over my syns, including a tub of ice cream! I felt so anxious for the whole drive to group but as usual, as soon as i get into group i feel fine.

I was completely shocked  when i got on the scales and it said i have lost 1lb!! this means i am currently 9st 12lbs. Really need to start being on plan more though as not very far from target, though i may still change that.

This morning once i was over the excitment of losing, i made some oat biscuits. I saw one of my lovely instagram friends post pictures of these and i just had to try them! They are so easy to make. So I just had to share the recipe! 

Oat Biscuits

35g oats
1 egg
3 tsp sweetener 

All you do is mix the oats, egg and sweetener together. 

On a baking tray lined with grease proof paper. Spoon the mixture to make as many biscuits as possible.

Bake in oven heated at 180 for 20 minutes. 

Voila! You have oat biscuits! 

I am going to have a play around with them, maybe add golden syrup or choc shot! These are syn free if using oats as healthy extra.

All gone down hill!

Haven't posted due to being so tired since I got back from Scotland that I have just been sleeping and working! 

I did try to make mac and cheese from a slimmingworld magazine but it was possibly the worst thing I have ever tasted! I honestly was just gagging while trying to eat it! Safe to say I will never be making that again and ended up eating batchelors rice and salad! Which turned out to be a really good meal. 

Went to my mums last night for tea, she was making roast chicken dinner! Was lovely and just what I needed but I did then eat half a tub of cookie dough ice cream! So disappointed in myself! Means I won't be losing this week at weigh in but I woke up this morning with a bug so not sure I will be even able to make it! 

Sorry for the brief post but not feeling well is not helping! Hopefully have some nice recipes up here soon. Going to have a good play around with my spiralizer to see what sort of meals I can make.

New kitchen toy and a long car journey


After saying bye to the boyfriend and driving the 400 miles home, safe to say I am extremely tired and upset as I hate living so far apart! I have resisted the burger kings and mc Donald's that were seen the whole way back but I haven't eaten much today due to being in the car for 8 hours.

Managed 2 hifi bars ( healthy extra), banana bread(3 syns) and a banana. Once home I did get some lentil type stew thing out of the freezer to have with tagliatelle and going to have a cream egg and cheese strings ( healthy extra). Not my usual 3 meals a day and snacks! But best I could do today, specially as mood is low.

On a more positive note, my new kitchen toy turned up!! I ordered it while I was away, cost me £20 off eBay and I think I will be using it lots! It's a spiralizer so can use it to make vegetable noodles etc



I used it to make some courgette noodles to mix in with my tagliatelle! Was very easy to use! Really quick and so easy the clean. It is dishwasher friendly and for £20 it's defiantly worth a try! I can't wait to use this with lots of  meals!!


I am now going some well deserved sleep and dream about what I can use this to make next!

French toast/Eggy bread


Most of you may already know how to make this but I have had a few people ask me over Instagram so decided I would post the recipe up!

This is my favourite breakfast! Worth using your healthy extra on.I also enjoy saving it for when I come back off a night shift! Also good if you fancy pancakes as they have a very similar taste! Well that's my opinion anyway.

All you need 
 2 Slices of wholemeal bread (400g loaf).
2 medium eggs.
Sweetener.
Fruit of your choice.
Any other toppings! I like to have golden syrup (2.5 syns) or lemon juice.

Just spray a pan with fry light and heat it up.
In a bowl, mix two eggs up with a bit of sweetener.
Soak the two bits of bread in the egg mixture on both sides.
Fry both sides until brown

Serve up with some sweetener and what ever else you fancy.
Really quick to make.


Slimming World Banana Loaf



Slimming World Banana Bread


This was a recipe I saw going round on Instagram! Thought I would give it a to as I love banana bread and have missed stuff like this. Good to have on a tea break or just as a low syn snack in the evening.

You will need
56g self raising flour (9 syns)
4 eggs
1tsp vanilla essence
1tsp baking powder (0.5 syns)
200g banana (10 syns)
Small cup of sweetener

What to do
Preheat oven to 180 degrees.
Line a loaf or cake tin with baking paper.
Separate 2 eggs.
Put the yolks in a bowl, along with 2 other eggs, sweetener, sifted flour, vanilla essence, baking powder, mashed banana and beat to combine.
Whisk egg whites to stiff peaks and fold into mixture.
Pour mixture into the tin.
Bake for 40 minutes.

If split into 14 it is just under 1.5 syns a slice! I made some yesterday and loved it. I also added some cinnamon which made it extra nice!!

A bit about the beginning

So I started slimming world after a holiday with a few friends and my friends little girl asked if I was pregnant. I was around the 11st mark. I am only 5ft 2 so it was bigger than I wanted to be or have ever been. Now I know that it's not a huge weight but I was not comfortable.

I had tried to join slimming world before but never stuck to it. I tried after holiday but again couldn't  stick to it and put weight back on, especially after Christmas. I did try doing it at home by myself but it meant that I would just have bad weeks and shrug it off. I didn't try.

I joined again after bumping into my consultant at a supermarket and made the decision that I needed to stick with it. This was on the 7th January this year, at this point I was only 10st 6. Target of 9st 4, that's not a lot to lose but I still needed the group support.

In my first week I lost 3 and a half pounds. Then maintained for a couple of weeks, had 2 pound losses for a couple of weeks, then went completely off plan and woke up on a Monday morning spooning a packet of Doritos with crumbs everywhere.. Opps! 2 pound gain that week, it was deserved as I did also finish a whole packet of rich tea biscuits. Thankfully I am now only half pound away from the weight I was before that slight blip.

That's a not very exciting run through of my journey so far!

Starting weight- 10st 6lb
Current weight- 9st 13lbs
Goal weight- 9st 4lbs
